Warm noodle salad recipe with cabbage, baby corn, white cabbage and mangetout

Making this warming dish for dinner will help to ease your digestion, which will in turn help your body to relax overnight.
Ingredients
- Rice or buckwheat noodles 200g
- Olive oil 1 tbsp
- Garlic clove 1, crushed
- Baby corn 4
- Red onion 1/2, sliced
- Carrot 1, peeled and sliced
- White cabbage 2 tbsp, shredded
- Mangetout/snow peas a handful
- Chicken, tofu or white fish 350g, cut into bite-size pieces
- Limes 2, juiced
- Sesame oil 2 tsp
- Tamari or soy sauce 2 tsp
- Fresh coriander a handful, chopped
Method

Step 1
Cook the noodles according to the packet instructions. Drain, rinse in cold water and place in a serving bowl.

Heat the oil in a wok or large pan, then add the garlic and a tablespoon of water. Add the vegetables when the garlic is soft (not brown). Toss the vegetables until wilted. Add them to the noodles.

Step 3
Cook the chicken or fish in the wok, stirring until cooked through, or add the tofu and warm through. Add these to the noodles. Toss together with the lime juice, sesame oil, tamari or soy sauce and coriander.
